We have created a Saison inspired beer that combines the brewing tradition of farmhouse ales with our local produce and our very own yeast! A year ago, we started a project at @racquetyfarm aiming to find a wild yeast that can ferment our beverages. After a lot of work and trials, and with the help of The National Collection of Yeast Cultures we were able to isolate a strain of Saccharomyces Paradoxus. It's open and widely accessible for everyone, as DNA material shouldn't be property for an enterprise, just look for NCYC 4421. We named the yeast in honour of Ros, landlady of Racquety farm who has played a key role in our project. We only use British hops in our brews, and for this occasion, we have selected leaf Goldings and Sovereign from @charlesfaram As a base malt, we use Low Colour Maris Otter from @warmalt and raw wheat, Hen Gymro, a Welsh heritage landrace wheat of South West Wales.
