'Lost and Grounded have become firm friends with us and we continue to break the Thaw boundaries. While a collaboration of a Big Thaw took place at their Bristol site, we collaborated on a Little version. Little Thaw has a crisp malty backbone for the hops to layer up on. Simcoe, Centennial and Azacca are blended together for a classic citrusy and pine west coast pale with a touch of stone fruit in the background.'

'We've not brewed a Double IPA since 2018. The one before was 2015. Long gaps between, which perhaps indicates how we enjoy our Double IPAs rarely, but intensely. This batch fits that profile. Our profile. The world and range and breadth of IPAs and Double IPAs has changed much in the intervening years. Evolution. Which necessitates a certain explanation of things that have stayed the same. This Double IPA has remained close in recipe and intention to our previous Double IPAs. In the modern beer vernacular we've seen beers of this style now termed â 'west coast', 'old school' or even 'classic'. Badges we wear with pride, but not ones we use in the brewery. Our vision of an IPA has different roots (to us at least). But in any case, to be clear (pun intended), this is not a hazy, juicy, NEIPA. The effect of this beer round the brewery has been quite revelatory many a Proustian moment of reconnection to an old memory of lost beers, of IPAs as they maybe once were, of friends found and connections made. For one of the team the previous iteration of this beer (IPA Double SCCANS of 2012) was the first beer of ours they'd ever tried. But the beer carries this weight of history lightly. It is very much of the now, and is not bogged down by history. How a brewery configures the drinkability of its beers is always one of the most important questions, and it is the starting point for us almost especially in brewing a Double IPA. So we've tried to make this super clean, really lean, dry, bitter, but all integrating towards where we would like the balance to be. Of course it is fruity and hop forward also, but again in balance. This is most apparent in the aroma, which is citrus, stone fruit and the touch of dankness. Columbus and Simcoe most prevalent here, as they also have become signifiers of the west coast style. The flavour pivots towards marmalade / oranges / then pine, citrus peel / citrus pith into bitterness. The body is super light, dry, clean, clear (Californian Ale Yeast). Carbonation a touch higher than usual in our beers, to keep things light. The point of balance that this beer hits is (unintentionally) not far removed from that of a Tripel – a certain honeyed slight sweetness between the dryness of a beer and a high alcohol content which, when matched appropriately, gives an amazing smoothness to its drinking, a very deceptive smoothness. This point remains offset by the fruit character of the hops on one side, and the bitterness of the hops on the other. Which all work together constructing the drinkability we feel appropriate / desirable for a style like this. But we encourage folks to keep focus on the fact that this drinkability is deceptive. Deliciously so.'

'Our In Depth series celebrates and explores a single hop. This time we have shone a light on Idaho 7. A swirl of cloudy lemon sherbet in the glass, with a herbaceous, peppercorn aroma. Expect apricot jam, red grapefruit and subtle bergamot tannins laced over a balanced yet indulgent texture. All this with papaya, apricot and bold pine humming away on top. Vegan.'
'A big juicy treat of creamed coconut, papaya and white chocolate, thanks to our old friends Citra and Sabro. A light pine and lime hint cuts through, finishing up grape-like and slightly bitter. Vegan.'
'A simple and pale malt base with oats and wheat, made to be smooth and low colour, just like the latte you may have found matcha in. Within the mash we added whole cone Saaz hops. Later in the brewing process, the thiols released from this method of hopping are going to be working with the yeast, singing bright and loud with all of their lemony, lemony and herby notes. Idaho 7, Citrus and Talus hops added during active and post fermentation calls back to the trodden IPA path we’re all familiar with but to further weave together the characteristics of Matcha, utilising the combinations tropical flavours, leaning towards citrus and creamy flavours, more lime, more coconut, some familiar tropical flavours. We added the matcha on the cold side to avoid extracting too much bitterness and more of its vibrant fruity flavours that work so well with the abundance of tropical fruit flavours found in a NEIPA. The push and pull of each component vortexes inwards to create a beer like no other. It’s bitter but sweet. It’s fruity but savoury. It’s herbaceous but floral. A balance of contradiction to form harmony.'
'Spring is almost here and so is our beloved Volta, for the first time in 440ml cans and with a new design! We first brewed Volta in 2017 as we took baby steps into the world of sours! Volta is a 4.1% kettle sour with plenty of wheat, fresh rhubarb, blood orange purée and fresh orange zest! West Yorkshire is home to the Rhubarb Triangle; a nine-square-mile area between Wakefield, Morley and Rothwell where fuchsia pink rhubarb is grown and picked by candlelight between January and March each year. The rhubarb used in Volta is sourced from E. Oldroyd & Sons in Rothwell who have harvested rhubarb using this method for five generations. Dry, tangy, zesty and sessionable, this is a North staple.'
'A beer that feels an eternity in the making, we were first contacted by our pals 8 Wired toward the back end of 2020 to brew a trans-continental collaboration beer in celebration of New Zealand beer week. A series of unfortunate events seemed to be constantly putting this beer on the back burner before we finally managed to nail it down for 2023; and we’ve gone all out with If You’re Into It. A blessing in disguise as we’d just received a certified boat load of the freshest New Zealand hops, this beer is an all out showcase of the finest kiwi varietals we have access to. A supercharged hop bill of Nelson Sauvin, Motueka, and new to Polly’s Riwaka is bringing all manner of extreme citrus notes, fresh herbal complexity, as well as that unmissable white wine grape juiciness from in-house favourite Nelson.'
'If we were to be asked what is the most upcoming and underrated arm of our brewery in this sleepy corner of North Wales, we’d make a strong argument that our fruited sour game is coming along at a rapid pace. For something we were so nervy about trying for the first time it required a whole new brewer to implement, to today where Lally’s influence has created one of the safest, most reliable parts of our output next to our pale and hoppy beers. Mistmode is yet another entry into our sour logbook, with a whopping half tonne of passionfruit and lime added to create a sour beer fully Polly’s. Expect a juicy sweetness backed up with a spritzy puckering sourness in this all out banger of a beer.'
'Whilst we’re very much a forward-facing brewery when it comes to modern techniques and styles, sometimes there just ain’t anything better than looking to the past. In our formative years of exploring different styles of beer, we were taken by the robust and hoppy porters of the US; and we’re celebrating this in Oddspace. Utilising five different malts in the mash, this beer has layers upon layers of satisfying depth of flavour and complexity; with a whole host of cinder toffee, dark chocolate and coffee notes at the forefront of the party. It’s the hop bill where this beer comes truly to life however; with a generous addition of 15kg of Galaxy in the dry hop bringing a swagbag of fruit salad tropical notes, before our hearty addition of Simcoe in the whirlpool adds enough bitterness to keep everything in balance.'

Our pals at Overtone paid a visit to our Edinburgh brewery and together we created Overnight Oats, our thick and creamy golden oat-based breakfast beer. We’ve then added freshly roasted coffee beans from Edinburgh Tea & Coffee, alongside a generous helping of maple syrup and lactose for a truly authentic milky sweetness. '
