'After fermentation with lactobacillus and a clean Saison yeast strain, we aged this beer for 3 months in ex-red wine barrels before blending onto British raspberries. We used 300 g/l of raspberries in this beer and let them rest for nearly two months. Bright and zippy freshly squeezed raspberry is the overwhelming first impression of this beer. Clean tartness and a subtle bitterness mingle with the vanilla barrel character leading to a gentle, refreshing finish.'
