Little Earth Project says:

'In early summer, the delicate sweet perfumed elderflowers bloom plentifully along the winding country paths surrounding the brewery, while sharp, tart gooseberries grow plump in the East Anglian sun & are easily sourced from a local farm in nearby Lindsey. Both flavours complement the acidity of sour beer in their own unique ways which is why w've used them often over the years. The elderflower is intense on the nose upon first inspection, which leads to a more balanced restraint on the palate. The gooseberries come through with their tart zing, finishing dry & encouraging further sips.'
