'Lara and Dom, cheese experts at Two Belly in Bristol, returned for their second collaboration with us in June 2021. This cider explores different perspectives than our usual styles – higher acidity and pét nat, but still with some of our favoured barrel component. A day of tasting – and orchard cricket – followed, until we arrived upon this simple and joyful blend of three famous apples. Fruity, with some zippy sharpness, classic Dabinett tannins, a hint of smokey oak, all topped off with the natural sparkle (and natural sediment!) of a pét nat bottling.'
